EASY Gluten-Free, Fried Cake Doughnut Recipe

Ingredients

  • 2 cups gluten-free all purpose flour blend I use Arrowhead Mills
  • 1/2 cup brown sugar or sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup whole milk
  • 1/2 cup sour cream
  • 1 egg
  • 1 tbsp vanilla
  • 4 tbsp salted butter melted
  • oil for frying

Instructions

  • In this step we are going to combine all the dry ingredients - In a large mixing bowl combine flour, sugar baking soda, baking powder, and salt with a whisk.
  • Next we will work with the wet ingredients. In a small bowl, using the whisk attachment, add the milk, sour cream, eggs and vanilla and beat to combine. Melt butter over stove top and set aside.
  • Add the wet ingredients to the dry ingredients, and whisk together. Stir in the butter.
  • Now we are ready to form our gluten-free vanilla donuts! I typically like to roll the dough into balls to make doughnut holes, BUT if you are wanting the traditional gf donuts shape, you can roll this dough onto a floured surface and use the biscuit cutters I linked above! I usually put oil on my hands when working with the dough. Once donuts are formed, place on a baking sheet lined with parchment paper and place in the freezer for 30 minutes.
  • Pro tip! Before you fry your delicious homemade gluten free doughnuts, it's best to make the frosting or glaze or sugar mixture. Once the doughnuts have cooled slightly, I like to drizzle on the glaze or roll them around in the cinnamon sugar. I have a crowd of donut lovers in my house, each with their opinion on the best glaze or topping, haha! SO I end up make 3 or 4 options for decorating to make bellies happy!   • When 5-7 minutes left in the freezer, begin heating the oil. Once the oil reaches 325 degrees, we are ready for frying! Prepare a baking sheet, lined with paper towels or a cooling rack, so you have a place to put the doughnuts once they have cooked in the oil. Using a ladle, add the donuts to the hot oil. Make sure to not overfill the pot - you don't want them touching. After about 3 minutes, use the ladle to gently flip the donuts. Cook another 2-3 minutes until donuts are a golden brown. Use the ladle to gently remove and place the donuts on the prepared paper towels or wire rack.
  • Once they have cooled slightly, decorate with your glaze or mix of choice! Place back onto the cooling rack to set. You will repeat this process until the donut batter has been used. Remember to keep your oil temperature at a steady 325-350 degrees - for my gas stove this usually means a steady medium/ medium low heat.
