This copycat Zoe’s salad dressing is fresh, vibrant, and incredibly easy to make with simple pantry ingredients. It delivers that classic Mediterranean flavor that tastes light yet bold, making it perfect for salads, grain bowls, marinades, or drizzling over roasted vegetables.

Ingredients

  • 1/2 tsp garlic granules
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp salt
  • 1/2 fresh ground pepper
  • 1 cup extra virgin olive oil
  • 5 tbsp red wine vinegar

Instructions

  • Combine the Dry Ingredients
  • In a small mixing bowl or glass jar, add the garlic granules, dried oregano, dried basil, salt, and freshly ground black pepper. Mixing the dry ingredients first helps evenly distribute the seasonings throughout the dressing.
  • Add the Vinegar
  • Pour the red wine vinegar into the bowl with the seasonings. Whisk well until the salt begins to dissolve and the herbs are evenly dispersed. This step helps bloom the dried herbs, allowing them to release more flavor.
  • Slowly Add the Olive Oil
  • While whisking continuously, slowly drizzle in the extra virgin olive oil. Continue whisking until the dressing becomes well combined and slightly thickened. This helps emulsify the oil and vinegar for a smooth, cohesive dressing.
  • Alternative Method:
  • Add all ingredients to a mason jar with a tight-fitting lid and shake vigorously for 30–45 seconds until fully combined.
  • Let the Dressing Rest
  • Allow the dressing to sit for 10–15 minutes before serving. This gives the dried herbs time to soften and fully infuse the dressing with flavor.
  • Taste and Adjust
  • Taste the dressing and adjust seasoning if needed. Add a pinch more salt, pepper, or a splash of vinegar depending on your flavor preference.
  • Serve or Store
  • Use immediately or store in an airtight glass container or jar in the refrigerator for up to one week. Shake or whisk before serving, as natural separation will occur.
