Tropical Mango Salsa Recipe (Perfect for Summer)

Tropical Mango Salsa has all the ingredients we love about summer! Mango. Cilantro. Cumin. Garlic. Oh, my!

In March of my senior year of high school, I became chronically sick and no one could really figure out the culprit. Mind you, this was 20 years ago, and gluten and Celiac Disease weren’t one of the first items to check. After a month of missing school, losing a significant amount of weight, and my mom researching everything, she suggested to the gastroenterologist testing for Celiac Disease. 

I remember going to the appointment, completing the testing and then waiting for the results. And I remember when my mom called me to tell me that indeed I did have this weird disease. I was driving to one of Eden’s, my sister, soccer games. I remember what street I was on and I remember having to pull over because I couldn’t see through all the tears. Sure it was an easy fix – just don’t eat gluten – but it was a major life shift for an 18 year old who was about to go off to college. And truly, gluten-free wasn’t a thing like it is now. The whole first 10 years of this diagnosis was pretty isolating, and, even now, it still is.  

At my high school, the seniors would go on a senior trip to Belize. The trip was half mission work, and half touristy-fun. When I embarked with my class to Belize, I had just been diagnosed and was pretty nervous to eat anything other than fruit, for fear of getting sick in a foreign country. So I ate all the mango and watermelon and pineapple my heart desired. That trip was the first bit of normalcy for my teenage self, after a chapter of unknown. The adventure. The time with friends. The expansion of life beyond my Oklahoma corner. 

And mango salsa was a staple for me that trip, and now, a reminder of a sweet little 18 year old girl, overcoming and moving forward.

Ingredients:

  • ripe mangos
  • tomatoes
  • red pepper, bell
  • red onion
  • fresh cilantro, chopped
  • jalapeno, diced
  • cumin
  • garlic, crushed
  • olive oil
  • red wine vinegar
  • fresh lime juice
  • pepper

?Instructions:

  1. Pit and chop the mangoes. 
  2. Chop the tomatoes, red bell pepper, onion and cilantro. 
  3. Deseed and chop the jalapeno pepper. (make sure you wash your hands!)
  4. Add all ingredients to a medium mixing bowl, add the seasonings, red wine vinegar and squeeze of lime. Stir to combine. 
  5. ENJOY with your favorite tortilla chips or over top grilled meat!

Storage:

Store the fresh salsa in an airtight container in the refrigerator for up to 3 days!

Tips and Tricks:

  • Use the cup trick to pit the mangos!
  • Make ahead of serving, store in the refrigerator and let the flavors marinade!

Ingredients

  • 3 ripe mangoes
  • 1 cup tomatoes chopped
  • 1 cup red bell pepper chopped
  • 1/2 cup red onion chopped
  • 1 cup cilantro chopped
  • 3 tsp jalapeno diced
  • 1 clove of garlic crushed
  • 2 tsp cumin
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1/2 cup fresh lime juice
  • 1/2 tsp pepper

Instructions

  • Pit and chop the mangoes.
  • Chop the tomatoes, red bell pepper, onion and cilantro.
