Sonoma Chicken Salad Recipe – Whole Foods Copycat
When I was a junior in high school I had taken the ACT, been accepted to my top colleges of choice, had scholarships lines up, and I was ready to spread my wings and fly! Then in the spring semester of my senior year, I became ill, to later be diagnosed with Celiac Disease. A diagnosis that at the time, was quite different than a diagnosis nowadays. And it kind of “derailed” my plans. I felt overwhelmed with the life changes it would require, especially in the throes of moving across state lines. Hindsight, I wish I would have had the courage to charge forward and trust it would all work out. But instead I opted to go to a community college for a year to get my footing. At the same time, I got a job at Whole Foods and I was determined to learn all the ins-and-outs of a gluten free lifestyle. And I did, with the help of a beloved nutritionist, Sharon.
One of my favorite meals when I was working was the chicken salad; the Whole Foods Sonoma Chicken Salad to be specific. A perfect blend of sweet and savory, with the crunch of the pecans and crisp celery – YUM!
