I love when citrus takes centerstage during the winter months, in holiday decorating but especially in baking and cooking. These gluten free cranberry orange muffins are tart and sweet swirled together, paired with the perfectly fluffy texture of the muffin – total winter heaven.

When I was diagnosed with Celiac Disease I was 18 and pivoted from going off to college, to staying home for a year to acclimate. I attended the community college, and got a job at Wild Oats (now Whole Foods) to learn all I could about this new way of life. I became good friends with the nutritionist on staff and learned all I could.

Those first several years/ 5 or 6 HA, I mostly ate meat, fruits and vegetables, as baked gluten free goods were horrible. However, there were these scones I found in the freezer section and I can’t even remember the brand, but they were so so good. And of course, one of my favorite flavor combinations, cranberry orange. I would buy one to enjoy every Saturday morning, as my little treat, that came few and far between, but I think that made me appreciate it more.

This recipe mirrors those scones, but being homemade and made into muffin form!

Why You Will Love This Recipe:

  • Bright, fresh citrus flavor â€” Fresh orange juice and orange zest give these muffins a delicious citrus flavor that pairs beautifully with tart cranberries.
  • Perfect balance of sweet and tart â€” Maple syrup and dark brown sugar add rich sweetness that balances the naturally tangy cranberries.
  • Soft and tender texture â€” Greek yogurt, melted butter, and a gluten-free flour blend help create moist, flavorful muffins without the gluten.
  • Easy to make at home â€” Simple ingredients and straightforward instructions make this recipe approachable for beginner and experienced bakers alike.
  • Perfect for breakfast or snacks â€” Enjoy these muffins with your morning coffee, pack them in lunchboxes, or serve them as an afternoon treat.
  • Easy to customize â€” Add chopped walnuts, pecans, or white chocolate chips for extra flavor and texture, or divide the batter to make a variety of muffins.
  • Great for meal prep â€” Bake a batch ahead of time for an easy breakfast or snack throughout the week.
  • A delicious gluten-free option â€” These muffins deliver the comforting taste and texture of homemade bakery muffins using gluten-free ingredients.

Ingredients:

  •  2 ½ cups gluten-free all-purpose flour – creates the base of the muffins and provides structure. Use a gluten-free flour blend designed for baking, preferably one that contains a balanced mix of flours and starches for a soft, tender crumb. I also love using a blend of oat flour or brown rice flour, almond flour and arrowroot flour (a 50-25-25 blend).
  • 2 teaspoons baking powder – helps the muffins rise in the oven, creating light, fluffy muffins.
  • ½ teaspoon baking soda – works with the acidity of the Greek yogurt, maple syrup, and orange juice to help the muffins rise while contributing to a tender texture.
  • 1 tablespoon psyllium husk or 1 teaspoon xanthan gum – helps bind the gluten-free ingredients together and provides structure, preventing the muffins from becoming too crumbly. Psyllium husk absorbs moisture and adds flexibility, while xanthan gum helps mimic the elasticity of gluten. Use one option, not both.
  • 1 teaspoon salt – balances the sweetness of the brown sugar and maple syrup while enhancing the cranberry and orange flavors.
  • 2 large eggs – bind the ingredients together, provide structure, and help the muffins rise. For the best results, use room-temperature eggs so they incorporate easily into the batter.
  • 6 tablespoons butter, melted – adds richness, moisture, and a delicious buttery flavor. Allow the melted butter to cool slightly before mixing it with the other wet ingredients to prevent it from cooking the eggs. You could substitute coconut oil or avocado oil.
  • ¼ cup Greek yogurt – adds moisture and a subtle tang that complements the tart cranberries and bright orange flavor. It also helps create a soft, tender muffin crumb. Plain, full-fat Greek yogurt works especially well.
  • ¼ cup dark brown sugar – provides sweetness and a rich, caramel-like flavor thanks to its molasses content. It also helps keep the muffins moist and enhances the warm, sweet flavors of the orange and cranberry.
  • ¼ cup maple syrup – adds natural sweetness and a subtle maple flavor that pairs beautifully with the tart cranberries. It also contributes moisture, helping the muffins stay soft.
  • ? cup milk – adds moisture to the batter and helps bring the gluten-free flour blend together. Whole milk works well for a richer texture, but your preferred milk can also be used.
  • 2 teaspoons vanilla extract – adds warmth and depth of flavor, balancing the tart cranberries and citrusy orange zest.
  • 1 ½ cups fresh cranberries, quartered – provide bright, tart bursts of flavor throughout the muffins. Quartering the cranberries helps distribute them more evenly throughout the batter, so you get cranberry flavor in every bite. Fresh cranberries work best, but frozen cranberries can also be used if thawed and drained well.
  • 1 orange, juiced and zested – adds fresh citrus flavor that complements the cranberries beautifully. The zest provides fragrant orange oils, while the juice adds brightness and a natural citrus tang. Zest the orange before juicing it, and use a fresh orange for the best flavor.

Instructions:

  1. Preheat the oven. Preheat your oven to 375°F and line muffin pan with parchment paper muffin liners. This helps prevent the muffins from sticking and makes them easy to remove after baking. You could also spray your muffin tin with oil.
  2. Combine the dry ingredients. In a medium mixing bowl, whisk together the gluten-free all-purpose flour, baking powder, baking soda, psyllium husk or xanthan gum, and salt. Whisk until everything is evenly distributed, breaking up any lumps in the flour. Set aside.
  3. Mix the wet ingredients. In the bowl of a stand mixer fitted with the paddle attachment, combine the eggs, dark brown sugar, maple syrup, Greek yogurt, milk, vanilla extract, and the juice of one orange. Mix on medium speed until the ingredients are smooth and well combined.
  4. Add the dry ingredients. Reduce the mixer to low speed and gradually add the dry ingredients to the wet mixture. Mix just until the flour is incorporated and no dry pockets remain. Avoid overmixing, as this can make the muffins dense.
  5. Incorporate the melted butter. With the mixer running on medium-low speed, slowly drizzle in the melted butter. Continue mixing just until the butter is fully incorporated into the batter. Turn off the mixer and scrape down the sides and bottom of the bowl with a spatula if needed.
  6. Fold in the cranberries and orange zest. Gently fold in the quartered cranberries and orange zest using a spatula, distributing them evenly throughout the muffin batter.
  7. Let the batter rest. Allow the batter to rest for 15–20 minutes at room temperature before baking. This step is especially helpful for gluten-free muffins because it gives the flour time to absorb the moisture and allows the psyllium husk or xanthan gum to hydrate. The result is a more cohesive batter and a softer, less crumbly muffin.
  8. Fill the muffin pans. Using a cookie scoop or large spoon, divide the batter evenly among the prepared muffin liners, filling each cavity about Â¾ full. This leaves enough room for the muffins to rise without overflowing. If desired, sprinkle a few extra cranberries on top for a pretty finish.
  9. Bake the muffins. Place the muffin pans in the preheated oven and bake for approximately 18–22 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean or with a few moist crumbs. If baking both pans at once, rotate them halfway through baking to encourage even browning.
  10. Cool and enjoy! Remove the pans from the oven and let the muffins cool for about 5–10 minutes before transferring them to a wire rack. Allow them to cool slightly before serving so the gluten-free crumb has time to set. Enjoy your cranberry orange muffins warm or at room temperature! Store left overs in an airtight container or a ziplock bag.

Baking tip: Gluten-free flour blends vary in how much moisture they absorb. After the 15–20-minute rest, the batter should be thick but scoopable. If it seems unusually stiff, gently fold in a small splash of milk before portioning.

Perfect Pairings:

  1. Coffee or a latte â€” Pair these muffins with freshly brewed coffee, a vanilla latte, or a cappuccino. The rich, slightly bitter flavor of coffee balances the sweetness of the muffins and complements the bright orange notes.
  2. Greek yogurt and fresh berries â€” Serve a muffin alongside creamy Greek yogurt, fresh blueberries, strawberries, or raspberries for a simple, satisfying breakfast. Add a drizzle of honey or maple syrup for extra sweetness.
  3. Scrambled eggs and fresh fruit â€” Enjoy these muffins with scrambled eggs and a side of sliced fruit for a balanced breakfast that combines sweet and savory flavors.
  4. Butter or honey butter â€” Split a slightly warm muffin in half and spread it with softened butter or homemade honey butter. The creamy topping complements the tart cranberries and sweet citrus flavor.
  5. Earl Grey or herbal tea â€” Earl Grey tea’s subtle citrus notes pair beautifully with the orange zest, while chamomile or ginger tea makes a cozy accompaniment for an afternoon snack.
  6. A holiday brunch spread â€” Add these muffins to your Thanksgiving or Christmas brunch alongside a fresh fruit platter, breakfast potatoes, eggs, and yogurt. Their cranberry-orange flavor makes them a festive addition to any holiday table.
  7. Cream cheese spread â€” Spread a little softened cream cheese on a cooled muffin for a creamy, slightly tangy addition that complements the sweet maple syrup and tart cranberries.
  8. Smoothies â€” Pair a muffin with a strawberry-banana smoothie or a mango-orange smoothie for a refreshing breakfast or quick snack.

Baker’s tip: For an extra-special finish, drizzle the cooled muffins with a simple orange glaze made from powdered sugar and fresh orange juice. It adds a touch of sweetness and makes the citrus flavor even more pronounced.
