Over the summer, when my tomatoes were in full swing I wanted to make a creamy pasta recipe. One that felt summery, and one that could also feel cozy for the winter months. As most problems are solved, this one was solved with cheese and heavy cream, a dream duo and one that makes this recipe a win all year long.

We have enjoyed this creamy tomato pasta sauce with simply pasta, as well as over chicken schnitzel. You really can’t go wrong, and the aroma it gives your home is one that is comforting and cozy, a vibe we want all year long. And while we can easily find store-bought sauce, it just cannot compare to homemade. The sweetness of the tomatoes is enhanced with the cream, while the cheese and spices elevate the robust body of the sauce. I guarantee your household will declare it a needed weeknight dinner rotation!

Why You Will Love This Recipe:

  • Made with fresh tomatoes and simple ingredients – Ripe Roma tomatoes give this sauce a naturally sweet, fresh tomato flavor that you just can’t get from a jar.
  • Rich and creamy – Heavy cream and freshly grated Parmesan create an incredibly smooth, velvety sauce without requiring complicated techniques.
  • Easy to make – Everything comes together in one skillet before being blended into a creamy sauce, making this a simple recipe for busy weeknights.
  • Full of flavor – Fresh garlic, onion, thyme, oregano, parsley, and a touch of crushed red pepper create layers of savory flavor with just the right amount of heat.
  • Perfect for pasta night – Toss it with your favorite pasta for a comforting dinner the whole family will love. A little reserved pasta water helps the sauce cling perfectly to the noodles.
  • Versatile – Use this sauce with pasta, chicken, shrimp, meatballs, roasted vegetables, or even as a base for baked pasta dishes.
  • Freezer-friendly – This recipe makes enough for two batches, so you can freeze half and have a homemade sauce ready for another meal.
  • Better than store-bought – Fresh ingredients and freshly grated Parmesan give this sauce a homemade flavor that makes it feel extra special.
  • Easy to customize – Make it spicier with additional red pepper flakes, add fresh basil for a different flavor, or thin it with pasta water to create the perfect consistency.
  • Comfort food made simple – It has the rich, creamy flavor of a restaurant-style sauce without requiring hours in the kitchen.

Ingredients:

  • 2–3 tablespoons olive oil or salted butter – Used to sauté the onion and garlic, creating a flavorful base for the sauce. Butter adds extra richness, while olive oil keeps the flavor lighter.
  • 1 medium yellow onion, diced – Finely dice the onion so it cooks evenly and softens into the sauce, adding natural sweetness and depth.
  • 4 cloves of garlic, grated – Freshly grated garlic distributes its flavor throughout the sauce and creates a rich, aromatic base. Fresh garlic is best for this recipe.
  • 6–8 Roma whole tomatoes, halved – Roma tomatoes are meaty and flavorful with less moisture, making them ideal for creating a rich tomato sauce. Choose ripe tomatoes for the best flavor.
  • 2 cups heavy cream – Gives the sauce its signature creamy, smooth, and velvety texture. Full-fat heavy cream is recommended for the richest results.
  • 1 tablespoon fresh thyme – Adds an earthy, slightly lemony flavor that pairs beautifully with the tomatoes and cream. If using dried thyme, use about 1 teaspoon.
  • 1 tablespoon dried oregano – Adds a savory, herbaceous Italian-inspired flavor that complements the tomatoes.
  • 1 tablespoon fresh parsley, chopped – Adds a bright, fresh flavor that balances the richness of the cream and Parmesan.
  • 1 teaspoon crushed red pepper flakes – Adds a subtle kick of heat. Reduce or omit for a milder sauce, or increase if you prefer more spice.
  • 2 teaspoons salt – Enhances all of the flavors in the sauce. Start with slightly less and adjust at the end, especially since Parmesan adds saltiness.
  • 1 teaspoon black pepper – Adds warmth and depth to the sauce. Freshly cracked black pepper is recommended.
  • 2 cups freshly grated Parmesan cheese – Adds a rich, nutty, savory flavor while helping the sauce thicken and become extra creamy. Freshly grated Parmesan melts more smoothly than pre-shredded cheese.
  • ½–1 cup reserved pasta water, as needed – The starchy pasta water helps loosen the sauce and allows it to cling beautifully to pasta. Reserve the water before draining your pasta and add it gradually until you reach your desired consistency.

Instructions:

  1. Sauté the onion and garlic.
In a large skillet, heat 3 tablespoons of extra-virgin olive oil over medium-low heat. Add the diced onion and grated garlic. Sauté for about 2–3 minutes, stirring occasionally, until the onion begins to soften and the garlic becomes fragrant. Be careful not to let the garlic brown, as it can become bitter.
  2. Cook the tomatoes.
Reduce the heat to low and arrange the halved Roma tomatoes in the skillet skin-side up, with the cut side resting directly against the bottom of the pan. Arrange them in a single layer as much as possible. Cover the skillet with a lid and allow the tomatoes to gently cook for 10–15 minutes, or until they become very soft and tender.
  3. Remove the tomato skins.
Check the tomatoes by gently pressing them with a fork. When the skins begin to loosen and can be easily pulled away, the tomatoes are ready. Carefully remove and discard the skins using a fork or a pair of tongs. Don’t worry if a little skin remains—the sauce will still turn out beautifully.
  4. Add the seasonings and cream.
Add the thyme, oregano, parsley, crushed red pepper flakes, salt, black pepper, and heavy cream to the skillet. Stir gently to combine all of the ingredients.
  5. Blend until smooth and creamy.
Using an immersion blender, carefully blend the tomato mixture directly in the skillet until the sauce is completely smooth and creamy. Move the blender around the skillet to ensure all of the tomatoes are incorporated.Alternatively: Carefully transfer the hot mixture to a countertop blender. Remove or loosen the blender’s center cap to allow steam to escape, cover the opening with a kitchen towel, and blend carefully until smooth. Work in batches if necessary and use caution when blending hot liquids.
  6. Add the Parmesan.
Once the sauce is smooth and creamy, a tomato puree, reduce the heat to low and gradually stir in the 2 cups of freshly grated Parmesan cheese. Continue stirring until the Parmesan is completely melted and incorporated into the sauce. If the sauce is thicker than you’d like, gradually add reserved pasta water, a few tablespoons at a time, until you reach your desired consistency.
  7. Taste and adjust.
Taste the finished sauce and adjust the salt, pepper, or crushed red pepper flakes as needed. If serving with pasta, toss the sauce with your warm pasta and add a little reserved pasta water as needed to help the sauce coat the noodles.
  8. Store or freeze.
This recipe makes approximately two batches of tomato sauce. Enjoy one batch immediately and allow the remaining sauce to cool completely before freezing. Transfer the extra sauce to a 1-quart freezer-safe mason jar, leaving some space at the top for the sauce to expand as it freezes. Seal tightly, label with the date, and freeze for future meals. Thaw the sauce in the refrigerator before reheating gently on the stovetop.

? Chicken

Serve the sauce over grilled, baked, or pan-seared chicken breasts or chicken thighs. The creamy tomato sauce adds richness and moisture to the chicken.

? Shrimp

For a quick and flavorful dinner, toss sautéed shrimp with the sauce and your favorite pasta. The sweetness of the shrimp pairs beautifully with the tomato and Parmesan.

? Roasted Vegetables

Drizzle the sauce over roasted broccoli, zucchini, asparagus, bell peppers, or cauliflower for an easy way to turn vegetables into a satisfying side dish or meatless meal.

? Meatballs

Pair it with Italian meatballs and pasta for a cozy, hearty dinner. The creamy tomato sauce makes a delicious alternative to traditional marinara.

Don’t forget the bread! Serve with warm crusty Italian bread, garlic bread, or a toasted baguette to soak up every last bit of sauce.

? Fresh Salad

Balance the richness of the sauce with a simple green salad tossed with a light vinaigrette. Arugula, mixed greens, tomatoes, and a little Parmesan make an especially nice combination.

? A Complete Dinner

For an easy dinner-party or family meal, serve creamy tomato pasta with grilled chicken, a crisp green salad, and warm garlic bread. It’s simple, comforting, and feels special enough for guests.

Tips and tricks:

  • Use ripe Roma tomatoes. The better the tomatoes, the better the sauce. Look for tomatoes that are firm but ripe and have a deep red color for the sweetest, most flavorful sauce.
  • Don’t rush the tomatoes. Cooking the tomatoes slowly over low heat allows them to soften and develop a deeper flavor without burning the garlic or onion.
  • Grate your garlic. Freshly grated garlic melts into the sauce beautifully and distributes its flavor more evenly than larger pieces of minced garlic.
  • Watch the garlic carefully. Garlic can burn quickly, especially in olive oil. Keep the heat at medium-low and stir frequently.
  • Remove the tomato skins when they’re ready. Don’t try to peel the tomatoes before cooking. Once they’re softened, the skins should slip off easily, making the process quick and simple.
  • Use an immersion blender for easy cleanup. Blending the sauce directly in the skillet saves you from transferring hot ingredients to another appliance. If using a countertop blender, always use caution when blending hot liquids.
  • Freshly grate your Parmesan. Pre-shredded Parmesan doesn’t always melt as smoothly because of added anti-caking ingredients. Freshly grated Parmesan creates a creamier, silkier sauce.
  • Add Parmesan over low heat. Once the cheese is added, keep the heat low and stir continuously until melted. Avoid boiling the sauce after adding the Parmesan.
  • Save your pasta water. Before draining your pasta, reserve at least ½–1 cup of the cooking water. The starch helps thin the sauce while also helping it cling to the pasta.
  • Adjust the consistency. If the sauce is too thick, add pasta water a little at a time. If it’s too thin, allow it to simmer gently for a few extra minutes.
  • Taste before serving. Parmesan can vary in saltiness, so taste the sauce at the end and adjust the salt and seasonings to your preference.
  • Make it ahead. The sauce can be prepared in advance and stored in the refrigerator for an easy meal later in the week.
  • Freeze the extra batch. Cool the sauce completely before freezing. Leave room at the top of your freezer-safe container for expansion, and thaw it in the refrigerator before reheating.
