I don’t know if it’s the teacher in me, but I love a good snack at 3:00. An after school pick-me-up if you will, to celebrate that glorious downhill roll to bedtime. LOL. I really do love teaching but because I stack all my courses into one day, I teach from 8:00 to 3:00 (that’s 7 hours straight of teaching math… when kids don’t often like to learn math… which feels like trying to perform a magic trick all day long) without breaks and by the time I roll into 3 o’clock I am pooped and ready to frolic home with my boys. And eat a good snack. One that is a quick snack while simultaneously being a sweet treat, and one that will carry me to dinner. These protein energy balls have been my go to lately. So yummy, full of fiber and protein and great for easy meal prep!
